  • 1/4 cup purple cabbage powder
  • 1/4 cup beet powder
  • 2 tablespoons lemon zest
  • 1 tablespoon honey
  • 1/4 cup mascarpone cheese
  • Edible glitter
  • Salt and pepper to taste

Instructions

  1. Sauté shallot in 2 tablespoons butter until translucent. Add rice and toast for 2 minutes, stirring constantly.
  2. Pour in white wine and stir until absorbed.
  3. Begin adding warm stock one ladle at a time, stirring frequently and allowing each addition to absorb before adding more.
  4. After 10 minutes, divide risotto into three pots.
  5. To the first pot, add strawberry powder and continue cooking with stock. To the second, add cabbage powder. To the third, add beet powder.
  6. Cook each pot separately, continuing to add stock and stirring until rice is creamy and al dente, about 18-20 minutes total.
  7. Stir remaining butter, Parmesan, and mascarpone into each pot. Season with salt and pepper.
  8. To serve, layer the three colors in rings on plates, drizzle with honey, sprinkle with lemon zest and edible glitter.
