  • 1 cup almond flour
  • 1/3 cup honey
  • 1/4 cup melted butter
  • 2 tablespoons dried culinary lavender
  • 1/2 teaspoon sea salt
  • 1/4 cup heavy cream
  • 2 tablespoons rose water
  • 1 egg, beaten

The Story & Steps

In the forests of Lothlórien, the Elves baked a special bread that could sustain a traveler through the longest journeys. While we cannot promise the magical properties of true lembas, this recipe brings together ancient grains and delicate floral notes to create something truly special.

Preparation

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the spelt flour, almond flour, lavender, and salt. Mix thoroughly to distribute the lavender evenly.
  3. In a separate bowl, whisk together the honey, melted butter, heavy cream, and rose water until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a soft dough forms. If the dough is too dry, add cream one teaspoon at a time.
  5. Roll the dough out to about 1/2 inch thickness on a floured surface. Cut into rectangular shapes, approximately 3x4 inches.
  6. Place the rectangles on the prepared baking sheet and brush each with beaten egg.
  7. Bake for 18-22 minutes until the edges are golden and the bread has a firm texture.
  8. Allow to cool completely. Wrap each piece individually in parchment paper tied with kitchen twine.

These keep for up to a week in an airtight container and are perfect for hiking or long road trips. Serve with butter and additional honey for a true feast worthy of the Elves.
