  • 3 tablespoons butter, melted
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons ricotta cheese
  • 1 tablespoon buttermilk
  • 1 green onion, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 egg yolk
  • 1/2 teaspoon black sesame seeds
  • Pinch of red pepper flakes
  • Salt to taste

The Story & Steps

Making börek for one seemed impossible until I discovered this pinwheel method. It's all the crispy, cheesy goodness of traditional börek without the commitment of making an entire tray.

Rolling Your Way to Happiness

  1. Preheat your oven to 375°F and line a small baking sheet with parchment paper.
  2. Mix together the feta, ricotta, buttermilk, green onion, parsley, red pepper flakes, and a pinch of salt.
  3. Lay out one phyllo sheet and brush it generously with melted butter. Top with the second sheet and brush again.
  4. Spread the cheese mixture evenly over the phyllo, leaving a 1-inch border on all sides.
  5. Starting from one short end, roll the phyllo into a tight log. Brush the outside with more butter.
  6. Curl the log into a spiral pinwheel and place it on your prepared baking sheet.
  7. Brush the top with egg yolk and sprinkle with black sesame seeds.
  8. Bake for 25-30 minutes until golden brown and crispy.
  9. Let it cool for 5 minutes before diving in.
