  • 3 cups chicken or vegetable stock
  • 1-inch piece ginger, sliced
  • 1 clove garlic, smashed
  • 1/2 chicken thigh or 1/2 cup shredded rotisserie chicken
  • 1 shallot, thinly sliced
  • 2 tablespoons neutral oil
  • 1 soft-boiled egg
  • Soy sauce to taste
  • Sesame oil to taste
  • Sliced scallions
  • White pepper

The Story & Steps

Congee is the ultimate solo food—infinitely adaptable, endlessly comforting, and somehow both simple and sophisticated. This version strikes the perfect balance between plain canvas and finished masterpiece.

Preparation

  1. Rinse the rice until the water runs clear, then add it to a pot with the stock, ginger, and garlic.
  2. Bring to a boil, then reduce to a low simmer. Cook uncovered for 45 minutes, stirring occasionally, until the rice breaks down into a creamy porridge. Add more water if it gets too thick.
  3. If using raw chicken, add it after 30 minutes of cooking. If using cooked chicken, add it in the last 5 minutes just to heat through.
  4. While the congee simmers, heat the neutral oil in a small pan and fry the shallot slices until deeply golden and crispy. Drain on paper towels.
  5. Remove ginger and garlic from the congee. Season with soy sauce and white pepper.
  6. Pour into your bowl and top with the soft-boiled egg (halved), crispy shallots, scallions, and a drizzle of sesame oil.

The crispy shallots provide textural contrast to the silky congee—it's this interplay that makes the dish feel complete.
