  • 2 tablespoons finely diced tomato
  • 1 tablespoon finely diced onion
  • 1 small garlic clove, minced
  • ½ teaspoon ground cumin
  • ¼ teaspoon Aleppo pepper or paprika
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • Salt and pepper to taste
  • Fresh parsley leaves
  • Lemon wedge
  • Sumac for sprinkling

The Story & Steps

Traditional lahmacun takes time and dough-making skills. This version gives you all the flavor—that intoxicating combination of spiced meat, tomato, and aromatic warmth—in about 20 minutes using a store-bought base. It's respectful yet practical, which is exactly how solo cooking should be.

Preparation

  1. Preheat your oven to 220°C (425°F) and place a baking sheet inside to heat up.
  2. In a bowl, combine the ground lamb, diced tomato, onion, garlic, cumin, Aleppo pepper, cinnamon, tomato paste, salt, and pepper. Mix thoroughly—you want the mixture to be paste-like and spreadable.
  3. Place your flatbread on a piece of parchment paper. Spread the lamb mixture evenly over the surface, right to the edges, pressing it down slightly.
  4. Carefully transfer the parchment paper with the flatbread onto the hot baking sheet. Bake for 12-15 minutes until the meat is cooked through and the edges are crispy.
  5. Remove from the oven and immediately top with fresh parsley leaves and a squeeze of lemon juice. Sprinkle with sumac.
  6. Let it cool for just a minute, then roll it up loosely and eat it with your hands, taking big bites. This is primal, delicious solo dining at its finest.
