  • 8 oz soba noodles
  • 2 sheets nori, torn
  • 4 shiitake mushrooms, sliced
  • 2 green onions, sliced
  • 1 tablespoon wakame seaweed
  • 1 tablespoon black sesame seeds
  • 1 teaspoon grated ginger
  • Splash of sake
  • Poached egg for serving
  • Pinch of white pepper

Instructions

  1. Cook soba noodles according to package directions. Drain, rinse with cold water, and set aside.
  2. Bring dashi broth to a gentle simmer. Add ginger and sake.
  3. In a small bowl, whisk both miso pastes with a ladle of hot broth until smooth. Return to pot.
  4. Add shiitake mushrooms and simmer for 5 minutes.
  5. Rehydrate wakame in warm water for 5 minutes, then drain.
  6. Add silken tofu cubes to the broth gently, trying not to break them.
  7. Divide noodles among bowls. Ladle hot broth over them.
  8. Add torn nori sheets—they'll float and drift like memories surfacing.
  9. Top each bowl with wakame, green onions, and black sesame seeds.
  10. Carefully place a poached egg in the center of each bowl.
  11. Season with white pepper.
