Ingredients

0/10 ready
  • 1 small injera (or substitute: 1 small sourdough flatbread)
  • 1/4 cup tomato sauce
  • 1/4 teaspoon berbere spice
  • 1/3 cup shredded mozzarella
  • 1/4 cup cooked lentils
  • 2 tablespoons diced red onion
  • 2 tablespoons diced bell pepper
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish
  • Crumbled feta (optional)

The Story & Steps

This recipe was born from a leftover injera and a pizza craving—the happy accident that proves fusion food can be both respectful and delicious. The tangy injera creates an unexpectedly perfect pizza base.

Preparation

  1. Preheat your oven to 425°F (220°C).
  2. Place the injera on a baking sheet lined with parchment paper.
  3. Mix the tomato sauce with berbere spice and spread it evenly over the injera.
  4. In a small bowl, toss the lentils, onion, and bell pepper with olive oil.
  5. Sprinkle half the mozzarella on the injera, add the vegetable-lentil mixture, then top with the remaining cheese.
  6. Bake for 8-10 minutes until the cheese is melted and bubbling and the edges of the injera are crispy.
  7. Remove from oven, top with fresh cilantro and feta if using, and serve immediately.

The berbere spice bridges the Ethiopian and Italian elements beautifully, creating a flavor profile that's entirely its own.
