  • 1 packet rice noodles or instant ramen
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon honey or sugar
  • Splash of vinegar (any kind)
  • Handful of shredded cabbage or coleslaw mix
  • Handful of peanuts, crushed
  • Lime wedge if you're fancy

Is this authentic Pad Thai? Absolutely not. Will it make you feel like you're eating something other than instant noodles for the 47th time this week? Absolutely yes.

Your Dorm-Thai Adventure

  1. Put your noodles in the mug and cover with boiling water. Set a timer for 4 minutes and contemplate whether you should've taken that cooking class.
  2. While the noodles soften, make your sauce: in a small bowl (or another mug, no judgment), mix peanut butter, soy sauce, honey, and vinegar. Microwave for 15 seconds to make it stirrable.
  3. Drain most of the water from your noodles—leave a tiny bit to help the sauce coat everything.
  4. Pour that peanut sauce over the noodles and stir like your life depends on it. It should be creamy and clingy.
  5. Microwave for 30 seconds to warm everything together.
  6. Top with raw cabbage for crunch (and to convince yourself you ate vegetables), crushed peanuts, and squeeze that lime over everything.
