Ingredients

0/6 ready
  • 1/4 cup instant rice or leftover cooked rice
  • 3/4 cup chicken or vegetable broth
  • 1/4 teaspoon grated fresh ginger or ground ginger
  • 1 teaspoon soy sauce
  • 1 egg (optional)
  • Sliced green onions, sesame oil, and white pepper for topping

The Story & Steps

Congee is what millions of people eat when they need comfort, warmth, or just something gentle. This mug version won't replace your grandmother's recipe, but it will get you through a long study night or a day when you're feeling under the weather.

Preparation

  1. Combine the rice, broth, ginger, and soy sauce in your mug. Stir well.
  2. Microwave for 2 minutes. Stir again—the rice should be starting to break down.
  3. Microwave for another 2 to 3 minutes, stirring every minute, until the mixture reaches a porridge-like consistency. Add more broth if it gets too thick.
  4. If adding an egg, crack it into the congee after the final stir and microwave for 45 seconds to 1 minute until just set.
  5. Top with sliced green onions, a drizzle of sesame oil, and a pinch of white pepper.
  6. Stir everything together and eat while hot.

The beauty of congee is its blankness—it's a canvas for whatever toppings you have on hand. Leftover proteins, crispy fried garlic, chili oil, all work beautifully.
