Ingredients

0/15 ready
  • 3 large parsnips, peeled
  • 2 large carrots, peeled
  • 1 pound lamb shoulder, cubed
  • 1 can (28 oz) whole peeled tomatoes
  • 2 cups red wine
  • 4 cups beef stock
  • 1 head garlic, roasted
  • 2 tablespoons smoked paprika
  • 1 tablespoon tomato paste
  • 3 tablespoons olive oil
  • Fresh oregano
  • 2 bay leaves
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish

The Story & Steps

In Guillermo del Toro's haunting masterpiece, a mandrake root becomes a symbol of magic and maternal protection. This stew transforms humble root vegetables into something mystical, swimming in a crimson broth worthy of the film's gothic beauty.

Instructions

  1. Carve parsnips and carrots into vaguely humanoid shapes with a paring knife, creating 'legs' and 'arms' from the roots. Set aside.
  2. Season lamb with salt and pepper. Heat olive oil in a large Dutch oven and brown lamb on all sides. Remove and set aside.
  3. In the same pot, add tomato paste and smoked paprika, stirring for 1 minute until fragrant.
  4. Squeeze roasted garlic cloves into pot, mashing them into the paprika mixture.
  5. Pour in red wine to deglaze, scraping up browned bits.
  6. Add tomatoes (crushing them with your hands as you add them), beef stock, bay leaves, and oregano. Return lamb to pot.
  7. Nestle your carved root 'mandrakes' into the liquid. Bring to a boil, then reduce to a simmer.
  8. Cover and cook for 2.5 hours until lamb is tender and roots are cooked through but still holding their shape.
  9. Serve in shallow bowls, making sure each person gets a whole carved root vegetable. Garnish with fresh parsley.

Eat this by candlelight and let your imagination wander into darker, more magical realms.
