Making the Ice Cream

  1. In a medium saucepan, combine cream, milk, 1/2 cup sugar, and 1/4 teaspoon sea salt. Heat over medium until it just begins to steam (do not boil).
  2. In a separate bowl, whisk together egg yolks and remaining 1/4 cup sugar until pale and thick.
  3. Slowly pour about 1 cup of the hot cream mixture into the eggs, whisking constantly (this tempers the eggs).
  4. Pour the egg mixture back into the saucepan with the remaining cream.
  5. Cook over medium-low heat, stirring constantly with a wooden spoon, until the mixture coats the back of the spoon (about 170°F).
  6. Remove from heat and strain through a fine-mesh sieve into a clean bowl.
  7. Stir in vanilla extract and 3-4 drops of blue food coloring until you achieve a light blue color.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Churn in an ice cream maker according to manufacturer's instructions.
  10. Transfer to a freezer-safe container and freeze until firm, at least 4 hours.

To Serve

Scoop into bars or rounds, insert a popsicle stick if desired, and sprinkle generously with flaky sea salt. Best enjoyed while watching the sunset with your best friends.
