  • 1 pound small okra pods, stems trimmed
  • 4 cups filtered water
  • 3 tablespoons sea salt
  • 6 cloves garlic, peeled
  • 2 tablespoons whole black peppercorns
  • 1 tablespoon coriander seeds
  • 1 tablespoon mustard seeds
  • 4 dried red chilies
  • Fresh dill sprigs

The Story & Steps

Okra gets a bad rap for its slime factor, but fermentation transforms it into a crispy, tangy revelation. These make the ultimate Bloody Mary garnish, but they're equally at home on a cheese board or eaten straight from the jar at midnight.

Fermentation Steps

  1. Dissolve salt in filtered water to make a brine.
  2. Pack okra vertically into clean quart jars.
  3. Add garlic cloves, peppercorns, coriander seeds, mustard seeds, and chilies to each jar.
  4. Tuck dill sprigs around the okra.
  5. Pour brine over everything, leaving 1 inch of headspace.
  6. Weight down the okra to keep it submerged.
  7. Cover with a fermentation lid or cloth secured with a rubber band.
  8. Let ferment at room temperature for 5-7 days, burping daily if using an airlock lid.
  9. Taste after day 5—you want them tangy but still crisp.
  10. Transfer to the refrigerator where they'll keep for months.

The slime completely disappears during fermentation, replaced by a satisfying crunch. Thread them on skewers with cherry tomatoes and celery for the ultimate Southern Bloody Mary.
