  • 6 salted/pickled plums (umeboshi or Asian sour plums)
  • 1/4 cup fish sauce
  • 1/2 cup palm sugar or brown sugar
  • 3 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 2-inch piece ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 Thai chilies, sliced
  • Fresh cilantro and lime wedges for serving

The Story & Steps

Fish sauce is fermented fish concentrated into liquid umami. Pickled plums are sour, salty, and intensely flavorful. Together, they create a caramel that's nothing like the sweet, one-dimensional glazes you're used to. This is complex, layered, and intensely savory with a fruity tang that keeps you coming back for another bite.

The key is slow cooking the ribs until they're tender, then finishing with the caramel under high heat to create a sticky, lacquered coating. These ribs are messy, funky, and absolutely worth the effort.

Preparing the Ribs

  1. Remove the membrane from the back of the ribs. Pat dry with paper towels.
  2. Season generously with salt and pepper on both sides.
  3. Preheat oven to 300°F (150°C).
  4. Wrap each rack tightly in aluminum foil. Place on a baking sheet.
  5. Bake for 2.5 hours until the meat is tender and pulling away from the bones.

Making the Caramel

  1. Remove pits from pickled plums and mash the flesh with a fork.
  2. In a saucepan, combine mashed plums, fish sauce, sugar, rice vinegar, garlic, ginger, soy sauce, sesame oil, and chilies.
  3. Bring to a boil, then reduce heat and simmer for 10-15 minutes, stirring frequently, until thickened and glossy.
  4. The caramel should coat the back of a spoon. It will thicken more as it cools.

Finishing the Ribs

  1. Remove ribs from foil and place on a foil-lined baking sheet.
  2. Increase oven temperature to 425°F (220°C), or prepare a grill for high heat.
  3. Brush ribs generously with the plum-fish sauce caramel.
  4. Cook for 5-7 minutes, brushing with more caramel every 2 minutes, until the glaze is sticky and caramelized.
  5. Watch carefully—the sugars can burn quickly.
  6. Let rest for 5 minutes before cutting into individual ribs.
  7. Garnish with fresh cilantro and serve with lime wedges to cut through the richness.
