  • 1/3 cup fresh lime juice (about 3-4 limes)
  • 1/3 cup sugar
  • Zest of 2 limes

The Story & Steps

I created this icy treat during a particularly brutal summer, and it's become my most-requested recipe. The alcohol keeps it from freezing solid, giving you perfect, slushy crystals every time.

Preparation

  1. In a medium bowl, whisk together the coconut milk, rum, lime juice, and sugar until the sugar completely dissolves.
  2. Stir in the lime zest, reserving a small pinch for garnish.
  3. Pour the mixture into a shallow metal baking pan (a 9x13 inch works perfectly) and place in the freezer.
  4. After 1 hour, use a fork to scrape and stir the mixture, breaking up any ice crystals forming around the edges.
  5. Repeat this scraping process every 30-45 minutes for the next 3-4 hours until you have a pan full of fluffy, crystalline ice.
  6. Scoop into chilled glasses, garnish with the reserved lime zest, and serve immediately.

Storage tip: This keeps in the freezer for up to 2 weeks. Just scrape with a fork before serving to fluff it back up.
