  • 2 tablespoons harissa paste
  • 3 tablespoons honey
  • 1 tablespoon olive oil
  • Fresh mint leaves for garnish

The Story & Steps

Halloumi is the cheese that made grilling cheese mainstream, but we're taking it in a spicier direction. The combination of fiery harissa and sweet honey creates a glaze that caramelizes beautifully against the salty cheese.

Preparation

  1. Pat halloumi slices dry with paper towels (this helps them brown better).
  2. Heat olive oil in a non-stick skillet over medium-high heat.
  3. Fry halloumi slices for 2-3 minutes per side until golden brown and crispy at the edges.
  4. While cheese cooks, whisk together harissa and honey in a small bowl.
  5. Transfer fried halloumi to a plate, immediately drizzle with harissa-honey mixture, and tear fresh mint leaves over the top.
