Ingredients

0/8 ready
  • 8 oz halloumi cheese, cut into 1-inch thick batons
  • 3 tablespoons za'atar spice blend
  • 1 tablespoon sesame seeds
  • 2 tablespoons chickpea flour
  • 1 egg white, lightly beaten
  • 3 tablespoons date molasses
  • 1 tablespoon lemon juice
  • Fresh mint leaves for garnish

The Story & Steps

Halloumi has a reputation for being grill-friendly, but the air fryer might be its true soulmate. The circulating heat creates an impossibly crispy exterior while keeping that signature squeaky texture inside intact.

Preparation

  1. Pat halloumi batons completely dry—this cheese releases moisture, so dryness is crucial for crispness.
  2. On a plate, combine za'atar, sesame seeds, and chickpea flour, mixing well.
  3. Brush each halloumi baton with egg white on all sides.
  4. Roll in the za'atar mixture, pressing gently to adhere. Coat generously.
  5. Place coated batons on a plate and refrigerate for 15 minutes to set the coating.
  6. Preheat air fryer to 400°F (200°C).
  7. Arrange halloumi soldiers in the basket in a single layer with space between each.
  8. Air fry for 6 minutes, flip carefully, then cook another 4-5 minutes until deeply golden and crispy.
  9. While cooking, whisk together date molasses and lemon juice.
  10. Serve immediately with the molasses drizzle and torn mint leaves.

Each bite delivers herbal, nutty za'atar crunch followed by stretchy, salty cheese. The sweet-tart molasses cuts through the richness perfectly.
