Ingredients

0/12 ready
  • 3 oz spaghetti or linguine
  • 2 tablespoons olive oil
  • 3 cloves garlic, thinly sliced
  • ¼ teaspoon red pepper flakes
  • 3 anchovy fillets (or 1 teaspoon anchovy paste)
  • 2 tablespoons capers
  • ¼ cup pasta cooking water
  • 1 tablespoon butter
  • Zest of ½ lemon
  • 2 tablespoons grated Parmesan
  • Fresh parsley if you have it
  • Salt and black pepper

The Story & Steps

This is the pasta that saves you when inspiration is low but standards are high. It's what chefs make themselves after service—simple, sharp, and satisfying in a way that complicated dishes never quite achieve.

Instructions

  1. Bring a pot of heavily salted water to boil. Cook pasta until just al dente, reserving ½ cup pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium-low heat.
  3. Add sliced garlic and red pepper flakes. Cook slowly, stirring, until garlic is golden and fragrant (about 2-3 minutes—don't rush this).
  4. Add anchovies and use a wooden spoon to break them down into the oil until they dissolve.
  5. Toss in capers and cook for another minute.
  6. Add drained pasta to the skillet along with ¼ cup pasta water and butter.
  7. Toss vigorously over medium heat until a silky sauce forms, adding more pasta water if needed.
  8. Remove from heat, add lemon zest and Parmesan, tossing until everything glistens.
  9. Season with black pepper and top with parsley if available.

Solo Cooking Truth: This dish tastes best eaten straight from the pan, standing at the stove, perhaps with a glass of whatever wine you have open. No plating, no pretense, just pure satisfaction.
