Ingredients

0/10 ready
  • 3 cups cold leftover rice
  • 1/2 cup leftover lo mein or chow mein noodles, chopped
  • 1/2 cup leftover kung pao chicken (or any protein), diced
  • 1/4 cup leftover vegetables from any dish
  • 3 tablespoons leftover sauce from any container
  • 2 eggs
  • 3 tablespoons vegetable oil
  • 2 scallions, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

The Story & Steps

Friday night you ordered too much. Saturday you ate some for lunch. Sunday you stare at six half-empty containers and contemplate your choices. Make this instead of ordering again.

The Consolidation

  1. Heat a large wok or skillet over high heat. This needs serious heat to work properly.
  2. Add 1 tablespoon oil and scramble the eggs. Remove and set aside.
  3. Add remaining oil. When shimmering, add the cold rice and break up any clumps. Let it sit undisturbed for 2 minutes to crisp.
  4. Add all your leftover proteins and vegetables. Toss everything together vigorously.
  5. Add the chopped noodles—they'll crisp up and add texture.
  6. Pour in any leftover sauces from containers, plus soy sauce and sesame oil. Toss until everything is coated.
  7. Fold the eggs back in and finish with fresh scallions.

The beauty is in the chaos. Sweet and sour mingles with garlic sauce. Crispy noodle bits add crunch. Every bite is different. This is how you clean out your fridge with dignity and create something better than the sum of its parts. Make it once, and you'll start saving takeout leftovers on purpose.
