That rock-hard baguette meets sweet cream in this savory-meets-sweet frozen rebellion. Who said ice cream can't taste like summer salad?

Ingredients

0/8 ready
  • 4 cups stale bread, cubed
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1/2 cup tomato jam
  • 1/4 cup basil leaves
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sea salt

The Story & Steps

Before you toss that petrified French bread, consider this: the Italians have been celebrating stale bread for centuries. We're just taking it somewhere they never dared to go.

The Transformation

  1. Toast your stale bread cubes at 350°F until deeply golden, about 15 minutes. Let them cool completely.
  2. In a saucepan, combine cream, milk, and sugar. Heat until sugar dissolves, then remove from heat and add basil. Steep for 30 minutes.
  3. Strain out the basil, then whisk in tomato jam, balsamic vinegar, and salt until smooth.
  4. Churn in an ice cream maker according to manufacturer's instructions.
  5. In the last 5 minutes of churning, add the toasted bread cubes, allowing them to break down slightly but remain textured.
  6. Freeze for at least 4 hours before serving.

The bread adds an unexpected crunch and soaks up the creamy base like the best panzanella, while the tomato jam provides that essential acidic sweetness. Serve with a drizzle of aged balsamic for the full circle moment.
