  • 1 lb sushi-grade salmon fillet, skin removed
  • ½ cup soy sauce
  • ¼ cup rice vinegar
  • 3 tablespoons fresh ginger, grated
  • 2 tablespoons sugar

The Story & Steps

Gravlax gets a passport to Tokyo in this fusion cure that firms the salmon while infusing it with umami and spice. The ginger cuts through the richness, making each bite feel bright and clean.

Preparation

  1. Pat salmon completely dry with paper towels. Check for any pin bones and remove with tweezers.
  2. Whisk together soy sauce, rice vinegar, ginger, and sugar until sugar dissolves.
  3. Place salmon in a shallow dish and pour marinade over it. Cover with plastic wrap, pressing it directly against the fish.
  4. Refrigerate for 2-3 hours (no longer than 4, or it becomes too salty).
  5. Remove salmon from cure, pat dry, and slice thinly against the grain. Serve with steamed rice or on crackers.

This is stunning as an appetizer, but also makes an elegant breakfast with avocado toast.
