  • 1 1/2 pounds mixed mushrooms (shiitake, oyster, cremini), torn or sliced
  • 4 tablespoons unsalted butter
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • Black pepper

The Story & Steps

This technique is all about building flavor in stages. The mushrooms release their liquid, then reabsorb it along with the butter and soy sauce, creating an almost caramelized coating that clings to every surface.

Preparation

  1. Heat a large skillet over medium-high heat. Add mushrooms without any fat and cook, stirring occasionally, until they release their liquid and it evaporates, about 8 minutes.
  2. Add butter and garlic to the pan and cook, stirring, until butter melts and garlic is fragrant, about 1 minute.
  3. Pour in soy sauce and toss mushrooms to coat. Cook for another 2-3 minutes until mushrooms are deeply browned and glossy.
  4. Season generously with black pepper.
  5. Serve immediately, making sure to scrape up all the pan sauce.
