  • 3 tablespoons white or yellow miso paste
  • 3 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/4 cup vegetable oil
  • 1 pound carrots, cut into thick sticks
  • 1 pound parsnips or sweet potatoes, cut into thick sticks
  • 1 medium red onion, cut into wedges
  • 3 tablespoons sesame seeds
  • 2 scallions, sliced
  • 1 tablespoon sesame oil for finishing

Sheet pan dinners usually mean roasted vegetables with protein on the side. This version takes the concept further by cooking the starch directly on the pan too, transforming leftover rice into crispy clusters that act like croutons. The miso-maple glaze brings everything together with umami-sweet complexity.

The key innovation here is treating the rice like a textural element rather than a side dish. Spread thin and roasted at high heat, it becomes crispy and addictive, soaking up the caramelized glaze from the vegetables.

Assembly and Roasting

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together miso paste, maple syrup, soy sauce, rice vinegar, and vegetable oil until smooth.
  3. In a large bowl, toss carrots, parsnips, and onion with half of the miso-maple mixture.
  4. Spread vegetables on one half of the baking sheet in a single layer.
  5. Toss the cooked rice with the remaining miso-maple mixture until every grain is coated.
  6. Spread rice on the other half of the baking sheet, breaking up clumps and spreading thin. Sprinkle sesame seeds over everything.
  7. Roast for 20 minutes, then remove from oven and use a spatula to flip the vegetables and break up and flip the rice clusters.
  8. Return to oven for another 15-20 minutes until vegetables are caramelized and tender, and rice is golden and crispy.
  9. Remove from oven and immediately drizzle with sesame oil. Let cool for 5 minutes to allow rice to crisp further.
  10. Transfer to a serving platter, garnish with scallions, and serve.

This technique works with almost any root vegetable and any leftover grain. Try it with roasted butternut squash and farro, or beets and quinoa. The principle remains the same: use high heat to caramelize the vegetables while simultaneously creating crunchy grain clusters that soak up all the flavorful drippings.
