Middle Eastern breakfast drama scaled down to microwave proportions. Tomato, spice, and a perfectly cooked egg prove that dorm rooms can handle brunch.

Ingredients

0/8 ready
  • 1/4 cup canned diced tomatoes
  • 1 egg
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • Pinch of cayenne pepper
  • 1 tablespoon crumbled feta cheese
  • Salt and pepper to taste
  • Fresh parsley or cilantro (optional)

The Story & Steps

Shakshuka is normally a skillet dish that takes patience and stovetop space. This mug version captures the essence—spiced tomato base, rich egg, tangy cheese—in under three minutes. It's proof that good food is about flavor combinations, not equipment.

Preparation

  1. Add the diced tomatoes to your mug along with cumin, paprika, cayenne, salt, and pepper.
  2. Microwave for 1 minute until the tomatoes are bubbling and fragrant.
  3. Stir the tomato mixture and make a small well in the center.
  4. Crack the egg into the well, keeping the yolk intact.
  5. Gently pierce the egg yolk with a fork tip (this prevents it from exploding).
  6. Microwave for 45 seconds to 1 minute and 15 seconds, depending on how runny you like your egg.
  7. Remove carefully (it will be hot!), top with crumbled feta and fresh herbs.
  8. Let it cool for a minute, then scoop up the egg with the spiced tomatoes in each bite.

Serve with pita chips or crackers on the side if you want to make it more substantial.
