  • 1 tablespoon canned chickpeas, drained
  • 2 eggs
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • Pinch of cayenne pepper
  • 1/4 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 tablespoon crumbled feta cheese
  • Torn bread for dipping

The Story & Steps

Shakshuka traditionally simmers in a wide skillet, but we're breaking the rules and proving that vertical cooking is just as delicious. This mug version captures all the warm spices and rich tomato flavor of the original while fitting perfectly into your dorm room setup.

Instructions

  1. Add the crushed tomatoes to your mug along with cumin, paprika, cayenne, oregano, salt, and black pepper.
  2. Place the mug on your hot plate set to medium heat and let the tomato mixture come to a gentle simmer, about 2-3 minutes.
  3. Stir in the chickpeas and let them warm through for 1 minute.
  4. Create two small wells in the tomato mixture and crack one egg into each well.
  5. Reduce heat to low and let the eggs cook gently for 4-5 minutes. The whites should be set and the yolks still slightly runny.
  6. Remove from heat and immediately top with crumbled feta cheese.
  7. Let rest for 1 minute, then use torn pieces of bread to scoop up the eggs and tomato mixture.

Spice it up: Keep a small jar of harissa paste in your mini-fridge and add a dollop on top for authentic North African heat. You can also substitute the feta with any soft cheese you have on hand—even a torn-up string cheese works in a pinch.
