  • 1 cup jasmine or medium-grain rice
  • 10 cups water
  • 3-inch piece of ginger, sliced
  • 4 scallions, white and green parts separated
  • 2 teaspoons salt
  • 1 teaspoon white pepper
  • 1/4 cup neutral oil
  • 3 tablespoons ginger, finely minced
  • 4 scallions, finely chopped (for oil)
  • Soy sauce for serving
  • Sesame oil for serving
  • Fried shallots for garnish

The Story & Steps

In many Chinese households, congee represents the ultimate transformation of leftovers into comfort. This version takes that roast chicken you've been picking at and turns the bones and scraps into something you'll crave on cold mornings or sick days.

Building the Congee

  1. Break the chicken carcass into several pieces to fit in your pot. Place in a large stockpot with the rice, water, sliced ginger, and scallion whites.
  2. Bring to a boil, then reduce to a gentle simmer. Cook for 1.5 to 2 hours, stirring occasionally to prevent sticking, until the rice has completely broken down into a creamy porridge.
  3. Remove the chicken bones and ginger slices. Pick off any meat from the bones and shred it, returning the meat to the pot.
  4. Season the congee with salt and white pepper, adjusting to taste. The consistency should be thick but pourable; add more water if needed.
  5. For the ginger-scallion oil: heat the neutral oil in a small pan until shimmering, add the minced ginger and chopped scallions, cook for 30 seconds until fragrant but not browned, then remove from heat.
  6. Serve the congee in bowls, topping each with a generous spoonful of the ginger-scallion oil, a drizzle of soy sauce, a few drops of sesame oil, and fried shallots.

This congee freezes beautifully and actually improves in flavor overnight as the rice continues to absorb the chicken essence. Consider it your reward for not throwing away that carcass.
