Okonomiyaki literally means 'what you like, grilled,' and this solo-sized version embraces that philosophy completely. It's part pancake, part frittata, and entirely satisfying when you're dining alone.

Preparation

  1. In a medium bowl, whisk together flour, baking powder, dashi, and egg until smooth.
  2. Fold in the shredded cabbage and spring onion until well coated.
  3. Heat a small non-stick skillet over medium heat and cook the bacon pieces until crispy. Remove and set aside.
  4. Pour the batter into the same skillet, forming a thick pancake about 6 inches in diameter.
  5. Scatter the cooked bacon on top and press it gently into the batter.
  6. Cook for 4-5 minutes until the bottom is golden, then carefully flip and cook another 4 minutes.
