  • 4 tbsp unsalted butter
  • 2 tbsp honey
  • Black sesame seeds for garnish

Most people only know radishes as raw, peppery salad toppers. But apply heat, and they undergo a miraculous transformation into sweet, turnip-like morsels that'll make you question everything you thought you knew about this underdog vegetable.

The miso butter creates a glossy, umami-rich coating that caramelizes beautifully in the oven, while honey balances the funk with just enough sweetness.

Preparation

  1. Preheat your oven to 425°F (220°C).
  2. Melt the butter in a small saucepan, then whisk in the miso paste and honey until completely smooth.
  3. Toss the halved radishes in the miso-butter mixture until every piece is coated.
  4. Spread on a baking sheet cut-side down and roast for 20-25 minutes, flipping halfway through, until golden and tender.
