Ingredients

0/5 ready
  • 1.5 lbs mixed mushrooms (shiitake, oyster, cremini), cleaned and torn
  • 3 tablespoons white miso paste
  • 3 tablespoons unsalted butter
  • 2 tablespoons sake or dry white wine
  • Thinly sliced green onions for garnish

The Story & Steps

Mushrooms are already packed with natural glutamates—the compounds that give food that savory, "can't stop eating" quality. When you add miso paste and butter, you're essentially creating an umami supernova. It's the kind of dish that makes people ask what your secret ingredient is, never guessing it's just smart layering of complementary flavors.

Preparation

  1. Heat a large skillet over medium-high heat. Add mushrooms to the dry pan and cook without stirring for 3-4 minutes to develop color.
  2. Stir and continue cooking until mushrooms release their liquid and it mostly evaporates, about 5 minutes more.
  3. In a small bowl, mix miso paste with sake or wine until smooth and pourable.
  4. Push mushrooms to the side of the pan, add butter to the empty space, and let it melt. Pour in the miso mixture and stir everything together.
  5. Cook for another 2 minutes until mushrooms are glossy and coated. Top with green onions and serve immediately.

Serving ideas: Pile these over brown rice, toss with soba noodles, or serve as a side to grilled fish. They're also incredible on toast for a quick, savory breakfast.
