  • 400g paneer cheese, cut into 2cm cubes
  • 3 tablespoons Greek yogurt
  • 2 tablespoons tandoori masala
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • Salt to taste
  • 8 sheets phyllo dough
  • 3 tablespoons melted butter
  • Fresh cilantro for garnish
  • Chaat masala for dusting

The Story & Steps

Paneer tikka is traditionally cooked in a tandoor oven, where intense heat creates a smoky char on marinated cheese cubes. By encasing the marinated paneer in phyllo and air-frying, we trap all those aromatic spices while creating a textural contrast that elevates the dish to new heights.

Preparation

  1. In a bowl, mix yogurt, tandoori masala, ginger-garlic paste, lemon juice, garam masala, turmeric, and salt.
  2. Add paneer cubes and toss gently to coat. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Cut phyllo sheets into squares approximately 10x10cm.
  4. Place one marinated paneer cube in the center of a phyllo square. Fold the corners up to create a small packet, brushing with melted butter between layers if using multiple sheets.
  5. Brush the outside of each packet with more melted butter.
  6. Preheat air fryer to 185°C (365°F).
  7. Arrange phyllo packets in the air fryer basket without touching.
  8. Air fry for 10-12 minutes until the phyllo is golden brown and crispy.
  9. Remove and let rest for 2 minutes before serving.
  10. Garnish with fresh cilantro and a light dusting of chaat masala.
