  • 1 teaspoon salt
  • 100ml golden syrup or molasses
  • 600ml buttermilk
  • 300g skyr (Icelandic yogurt)
  • 150g hot-smoked trout, flaked
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon horseradish, grated
  • Lemon zest from 1 lemon
  • Sea salt and black pepper to taste

The Story & Steps

Rúgbrauð, Iceland's iconic dark rye bread, was traditionally buried in pots near hot springs and baked for 24 hours using geothermal heat. The result is intensely dark, slightly sweet, and remarkably dense—a bread that can sustain you through harsh Nordic winters.

While most of us lack access to volcanic hot springs, a low-and-slow oven method approximates the traditional texture beautifully. Paired with protein-rich skyr and smoked fish, this is the breakfast of Vikings reimagined.

Preparation

  1. Preheat oven to 120°C (250°F).
  2. In a large bowl, whisk together rye flour, all-purpose flour, baking powder, and salt.
  3. In a separate bowl, mix golden syrup with buttermilk until combined.
  4. Pour wet ingredients into dry ingredients, stirring until just combined. The batter will be quite loose.
  5. Pour batter into a greased loaf pan and cover tightly with aluminum foil.
  6. Bake for 5-6 hours. Yes, really. The long, slow baking is essential for developing the bread's characteristic sweetness and dense texture.
  7. Remove from oven and let cool completely in the pan before unmolding.
  8. For the skyr spread, combine skyr, flaked smoked trout, dill, horseradish, and lemon zest in a bowl.
  9. Season with salt and pepper, mixing gently to maintain some texture from the fish.
  10. Slice the rúgbrauð thinly—it's very dense, so thin slices are important.
  11. Spread generously with the smoked trout skyr mixture.
  12. Serve with extra dill and a squeeze of lemon.

Note: The bread keeps for weeks wrapped tightly and actually improves after a day or two.
