Ingredients

0/12 ready
  • 1 large cauliflower steak, cut 1-inch thick from center of head
  • 1½ tablespoons olive oil
  • 1 tablespoon harissa paste
  • ½ teaspoon ground cumin
  • ¼ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1-2 tablespoons warm water
  • 2 tablespoons pomegranate seeds
  • 1 tablespoon fresh cilantro or parsley, chopped
  • Pinch of sumac (optional)

The Story & Steps

The cauliflower steak has become something of a cliché in vegetarian cooking, but there's a reason: when properly seasoned and roasted, a single cross-section of cauliflower becomes genuinely exciting. The key is aggressive heat and bold flavoring that doesn't apologize for being meatless.

Harissa—that complex North African chile paste—provides smokiness, heat, and depth that transforms this humble brassica into something you'd actually crave. The tahini sauce isn't just garnish; it's structural, providing richness and cooling contrast.

Preparation

  1. Preheat your oven to 425°F (220°C) and line a small baking sheet with parchment paper.
  2. In a small bowl, mix together olive oil, harissa paste, cumin, smoked paprika, salt, and pepper until well combined.
  3. Place the cauliflower steak on the prepared baking sheet and brush both sides generously with the harissa mixture, making sure to get into all the nooks and crannies.
  4. Roast for 25-30 minutes, flipping halfway through, until deeply caramelized and tender when pierced with a fork. The edges should be crispy and charred in spots.
  5. While the cauliflower roasts, make the tahini sauce by whisking together tahini, lemon juice, and a pinch of salt. Add warm water gradually until you achieve a pourable consistency—it should be thin enough to drizzle but not watery.
  6. Transfer the roasted cauliflower to a plate and drizzle generously with tahini sauce.
  7. Scatter pomegranate seeds and fresh herbs over the top, and finish with a pinch of sumac if you have it.

Each bite should give you charred, spicy cauliflower tempered by nutty tahini and punctuated by tart pomegranate jewels. It's proof that cooking for one doesn't mean settling.
