Ingredients

0/12 ready
  • 2 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • 3/4 cup warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 4 large eggs
  • 4 tablespoons butter
  • 2 tablespoons honey
  • Fresh black pepper to taste

The Story & Steps

Khachapuri, the national dish of Georgia, traditionally comes in many forms, but the Adjarian style—shaped like a boat and topped with egg and butter—makes for an especially dramatic breakfast presentation. The unexpected addition of honey bridges the savory richness with subtle sweetness.

Make the Dough

  1. In a large bowl, combine flour, yeast, sugar, and salt.
  2. Add warm water and olive oil, mixing until a dough forms.
  3. Knead for 5-7 minutes until smooth and elastic.
  4. Cover and let rise in a warm place for 1 hour until doubled in size.

Shape and Fill

  1. Preheat oven to 450°F (230°C).
  2. Divide dough into 4 equal pieces.
  3. Roll each piece into an oval about 8 inches long.
  4. Mix mozzarella and feta together, then divide among the ovals, placing cheese in the center.
  5. Fold the long sides up and pinch the ends together to create a boat shape.
  6. Place on parchment-lined baking sheets.

Bake and Finish

  1. Bake for 12-15 minutes until the crust is golden and cheese is bubbling.
  2. Remove from oven and crack one egg into the center of each boat.
  3. Top each egg with 1 tablespoon of butter.
  4. Return to oven for 3-5 minutes until egg whites are just set but yolks remain runny.
  5. Remove, drizzle with honey, and add fresh black pepper.
  6. Serve immediately, mixing the egg and butter into the cheese before eating.
