The Story & Steps

Kvass is a traditional fermented beverage from Eastern Europe, usually made from rye bread. This beet version is earthier, slightly sweet, and gets a sharp kick from fresh horseradish. The natural fermentation creates lactic acid and a complex flavor profile that's simultaneously sweet, sour, earthy, and spicy.

As a cocktail base, it's revelatory—the fermented funkiness plays beautifully with vodka's clean profile, while the earthiness grounds the drink in a way that feels both ancient and modern. This is a conversation-starting cocktail.

Fermenting the Kvass (5-7 days before serving)

  1. Place beet cubes and horseradish in a half-gallon jar.
  2. Dissolve salt and honey in filtered water. Pour over beets, leaving 2 inches of headspace.
  3. Weight the vegetables down so they stay submerged (use a smaller jar filled with water as a weight).
  4. Cover with cheesecloth secured with a rubber band. Fermentation needs airflow.
  5. Leave at room temperature away from direct sunlight.
  6. You'll see bubbles within 24-48 hours. The liquid will turn deep magenta.
  7. Taste after 5 days. It should be tangy, slightly effervescent, and earthy. Ferment longer for more funk.
  8. Once you're happy with the flavor, strain through cheesecloth. Reserve the liquid (kvass) and discard the solids.
  9. Store kvass in bottles in the refrigerator for up to 2 weeks. It will continue to ferment slowly.

Making the Cocktail

  1. Fill a rocks glass with ice.
  2. Add 2 oz vodka and 4 oz chilled kvass.
  3. Stir gently to combine.
  4. Garnish with a sprig of fresh dill, a crack of black pepper, and a lemon wedge on the rim.
