  • 1 tablespoon tomato paste
  • 1 teaspoon berbere spice blend
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil or butter
  • Salt to taste
  • Squeeze of lemon juice
  • Plain yogurt for topping (optional)

Red lentils are the overachievers of the legume world—they cook fast, require no soaking, and basically dissolve into creamy submission. Combined with berbere, the Ethiopian spice blend that tastes like warmth personified, they become something far greater than the sum of their parts.

This dish is what you make when you need something that feels like a hug but also has enough protein to keep you functional through your next three lectures.

Preparation

  1. Rinse lentils quickly in a small strainer if possible (if not, just pick out any debris).
  2. Put lentils and water in your mug. Microwave uncovered for 4 minutes.
  3. Carefully remove and stir. The lentils should be starting to soften. Microwave another 3-4 minutes until lentils are completely tender and breaking down.
  4. Stir in tomato paste, berbere, garlic powder, and oil until well combined.
  5. Microwave 1 more minute to let flavors meld.
  6. Mash with your fork to create a chunky-smooth texture.
  7. Season with salt and lemon juice. Top with a dollop of yogurt if you have it.

Berbere substitute: If you can't find berbere, mix together paprika, cayenne, cumin, coriander, and a pinch of cinnamon and ginger. It won't be authentic, but it'll be delicious.
