  • 240ml sparkling water, cold
  • 2 tablespoons berbere spice blend

  • 30ml apple cider vinegar
  • 1 tablespoon berbere spice
  • 2 tablespoons tomato paste
  • Salt to taste

The Story & Steps

The Buffalo wing has been vegetarianized countless times, almost always using boring spice profiles. Ethiopian berbere—with its complex heat, sweetness, and aromatic depth—transforms cauliflower into something that doesn't try to be chicken but succeeds as its own category of excellence. Teff flour, the grain behind injera, adds an authentic nuttiness and contributes to structural integrity during air frying.

Batter and Preparation

  1. Ensure cauliflower florets are completely dry. Cut them large enough to be substantial—about 5cm pieces.
  2. In a bowl, whisk together teff flour, cornstarch, berbere spice, and salt.
  3. Add sparkling water and whisk quickly until smooth. The carbonation helps create extra crispness. Use immediately before bubbles dissipate.
  4. Dip each floret in batter, coating completely. Let excess drip off.

Air Frying Process

  1. Preheat air fryer to 200°C.
  2. Arrange battered florets in basket in a single layer with space between each. Work in batches if necessary.
  3. Cook for 12 minutes, then flip each piece. Cook another 10 minutes until coating is crispy and deep golden brown.

Sauce and Finishing

  1. While cauliflower cooks, combine honey, vinegar, berbere, tomato paste, and salt in a small saucepan. Heat until bubbling, then reduce to a thick glaze, about 5 minutes.
  2. Toss hot cauliflower in sauce immediately after air frying.
  3. Return to air fryer for 2 minutes at 200°C to set the glaze and restore some crispness.

Serve with a cooling yogurt-based dip to balance the berbere's intensity. Unlike traditional wings, these improve after sitting for a few minutes as the flavors meld.
