Inspired by Tolkien's legendary waybread, this tender, sustaining bread combines ancient grains with a delicate floral glaze that captures the magic of the Undying Lands. One bite is said to fill the stomach of a grown man.
In the ancient forests of Lothlórien, the Elves baked a bread so nourishing that a single bite could sustain a traveler for a day's journey. While we may not possess their millennia of baking wisdom, this recipe captures the spirit of their legendary lembas—a wholesome, slightly sweet bread that seems to carry the very essence of starlight within its crumb.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, combine the spelt flour, almond flour, rolled oats, baking powder, and sea salt. The combination of these ancient grains gives the bread its distinctive, sustaining quality—much heartier than ordinary wheat alone.
In a separate bowl, whisk together the eggs, 1/4 cup honey, milk, melted butter, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir gently until just combined. The dough should be thick but slightly sticky, reminiscent of a very thick cookie dough.
Turn the dough out onto a lightly floured surface and pat it into a rectangle about 3/4 inch thick. Using a sharp knife or bench scraper, cut the dough into 12 rectangular pieces, approximately 3 inches by 2 inches each. The Elves were said to wrap each piece in mallorn leaves, but parchment paper serves admirably for we mortals.
Place the pieces on your prepared baking sheet, spacing them about 2 inches apart. Using a knife, score an 'X' lightly into the top of each piece—a marking that recalls the ancient Elvish runes of protection for travelers.
Bake for 18-22 minutes, until the edges are lightly golden and the bread is firm to the touch. While the lembas bakes, prepare your glaze by crushing the dried lavender buds with a mortar and pestle, then steeping them in 2 tablespoons of warm water for 5 minutes. Strain out the lavender, then whisk the lavender water together with the remaining 3 tablespoons of honey and powdered sugar until smooth.
Remove the bread from the oven and allow to cool for 5 minutes, then brush each piece generously with the honey-lavender glaze while still warm. The glaze will soak slightly into the bread, adding a ethereal floral note that transports you to elven groves.
Once cooled completely, wrap each piece individually in parchment paper tied with kitchen twine. These keep wonderfully in an airtight container for up to a week, making them perfect for your own journeys—whether to Mordor or merely to the office. Serve with a cup of herbal tea and let each bite sustain you through whatever adventures lie ahead.
