  • 3 tablespoons whole grain mustard
  • 2 tablespoons Dijon mustard
  • 3 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 2 teaspoons grated fresh ginger
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • ½ cup chicken stock

The Story & Steps

In Terry Pratchett's Discworld series, Wow-Wow Sauce appears on menus throughout Ankh-Morpork, though its exact composition remains mysterious. We've created a version that lives up to its name: an explosive combination of sweet, savory, spicy, and tangy that makes your taste buds sit up and take notice—twice.

Instructions

  1. Pat pork tenderloin dry and season generously with salt and black pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown, about 2 minutes per side. Remove pork and set aside.
  3. Preheat oven to 375°F (190°C).
  4. In the same skillet, add garlic and ginger, sautéing for 30 seconds until fragrant.
  5. Add chopped plums, both mustards, brown sugar, vinegar, soy sauce, paprika, and cayenne. Stir to combine.
  6. Add chicken stock and bring to a simmer. Let the sauce bubble for 3-4 minutes, mashing the plums slightly with a wooden spoon as they soften.
  7. Return the pork to the skillet, spooning sauce over it.
  8. Transfer the skillet to the oven and roast for 20-25 minutes, until pork reaches an internal temperature of 145°F.
  9. Remove from oven and let pork rest for 10 minutes.
  10. While pork rests, place the skillet back on the stovetop over medium heat and reduce the sauce until thick and glossy, about 5 minutes.
  11. Slice pork into medallions and serve with the Wow-Wow sauce generously spooned over the top.

Serving suggestion: Accompany with roasted root vegetables and explain to dinner guests that in some circles, this dish might be made with actual tongue. Then enjoy their expressions—the first "wow."
