Ingredients

0/14 ready
  • 400g paneer, crumbled
  • 2 tbsp ginger-garlic paste
  • 1 tsp garam masala
  • 1 tsp kashmiri chili powder
  • 1/2 tsp amchur (dried mango powder)
  • 3 tbsp Greek yogurt
  • 12 spring roll wrappers
  • 2 tbsp cornstarch mixed with 3 tbsp water
  • Cooking spray
  • 1 cup fresh mint leaves
  • 1 green chili
  • 1 tbsp lemon juice
  • 1/2 tsp cumin seeds
  • Salt to taste

The Story & Steps

The air fryer doesn't just crisp—it alchemizes. These paneer bombs prove that hot circulating air can create textures impossible to achieve in traditional frying, with a shattering exterior that gives way to spiced, creamy insides.

Preparation

  1. Combine crumbled paneer with ginger-garlic paste, garam masala, chili powder, amchur, yogurt, and salt. Mix thoroughly and refrigerate for 20 minutes.
  2. Place a spring roll wrapper on your work surface. Add 2 tablespoons of the paneer mixture to the center.
  3. Brush the edges with cornstarch slurry, then gather all corners to the center, twisting to seal and create a beggar's purse shape.
  4. Repeat with remaining wrappers and filling. Spray each bomb generously with cooking spray.
  5. Preheat air fryer to 190°C (375°F). Arrange bombs in a single layer, not touching.
  6. Air fry for 12 minutes, flipping halfway through, until deeply golden and crackling.
  7. Meanwhile, blend mint leaves, green chili, lemon juice, cumin seeds, and a pinch of salt with 2 tablespoons water until smooth.
  8. Serve the bombs immediately with the mint thunder drizzled over or on the side for dipping.
