  • 1/2 cup plain yogurt
  • 2 tablespoons gram flour (besan)
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons garam masala
  • 1 teaspoon kasuri methi (dried fenugreek leaves)
  • 1 teaspoon Kashmiri chili powder
  • 1 cup fresh mint leaves
  • 1/2 cup cilantro
  • 1 green chile
  • Juice of 1 lemon
  • Salt to taste
  • Chaat masala for garnish

The Story & Steps

Paneer tikka traditionally requires a tandoor oven or at least a very hot grill. The air fryer changes everything—it creates that characteristic charred exterior while keeping the cheese perfectly tender inside. The gram flour in the marinade is the secret to the crispy coating.

Preparation

  1. Whisk together yogurt, gram flour, ginger-garlic paste, garam masala, kasuri methi, chili powder, and salt in a bowl.
  2. Add paneer cubes and toss gently to coat completely. Marinate for at least 30 minutes (or up to 4 hours refrigerated).
  3. Arrange marinated paneer cubes in air fryer basket with space between each piece.
  4. Air fry at 380°F for 12 minutes, shaking the basket halfway through, until deeply golden with charred edges.
  5. While paneer cooks, blend mint, cilantro, green chile, lemon juice, and a pinch of salt with 2 tablespoons water to make a smooth chutney.
  6. Remove crispy paneer bites from air fryer and sprinkle immediately with chaat masala.
  7. Serve hot with mint chutney for dipping.

These paneer bites are incredible as an appetizer or served over rice as a main dish. The air fryer's intense heat mimics the dry heat of a tandoor, creating those coveted charred spots while keeping the interior creamy. Don't skip the chaat masala at the end—it adds a tangy, savory finish that's essential.
