Ingredients

0/11 ready
  • 3 cups leftover cooked noodles (any type: pasta, ramen, udon, spaghetti)
  • 2 eggs, beaten
  • 1/4 cup grated Parmesan or any hard cheese
  • 4 tablespoons butter, divided
  • 2 cups leftover cooked vegetables, chopped
  • 2 tablespoons white or red miso paste
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 green onions, sliced
  • Sesame seeds for garnish
  • Neutral oil for frying

The Story & Steps

There's a peculiar sadness to leftover noodles—they clump together in the refrigerator, losing their individual charm. But here's where alchemy happens. By treating them like a canvas rather than a casualty, you can create something with more texture and personality than the original dish.

Preparation

  1. In a large bowl, toss the leftover noodles with beaten eggs and grated cheese until well coated. The mixture should hold together when pressed.
  2. Heat 2 tablespoons of neutral oil in a non-stick skillet over medium-high heat. Divide the noodle mixture into 4 portions and press each into the pan, creating nest-shaped cups with an indent in the center. Cook for 4-5 minutes until the bottom is golden and crispy.
  3. Carefully flip each nest and cook another 3-4 minutes. Transfer to a baking sheet and keep warm in a low oven.
  4. In the same pan, melt 2 tablespoons butter over medium heat. Add garlic and cook for 30 seconds until fragrant.
  5. Add the chopped leftover vegetables and stir-fry for 2-3 minutes until heated through and beginning to caramelize.
  6. In a small bowl, mix the remaining 2 tablespoons butter (softened) with miso paste and soy sauce until smooth. Add this to the vegetables and toss until everything is glossy and coated.
  7. Spoon the miso-butter vegetables into the center of each crispy noodle nest. Garnish with sliced green onions and sesame seeds.

Serving Notes

These nests are best eaten immediately while the contrast between crispy exterior and savory filling is at its peak. They work equally well as a main dish or as an impressive side. The beauty lies in the textural transformation—what was once soft and forgettable becomes crackling and memorable.
