The Story & Steps

This dish was inspired by a breakfast we had in a tiny Bangkok alley—eggs cooked in coconut milk until the edges fry in the fat while the yolks stay jammy. The chili crisp adds a modern, funky heat that haunts your dreams.

Preparation

  1. Heat coconut milk in a large skillet over medium heat with minced garlic. Let it simmer for 2-3 minutes.
  2. Stir in chili crisp, then increase heat to medium-high and let the coconut milk bubble actively.
  3. Crack eggs directly into the bubbling coconut milk, spacing them apart.
  4. Cook for 3-4 minutes until whites are set but yolks remain runny. Baste the tops with the coconut milk occasionally.
