The Story & Steps

The Chinese technique of smashing cucumbers meets Scandinavian spice sensibilities in this refreshing salad that's become my summer obsession. Smashing creates irregular surfaces that absorb dressing far better than neat slices ever could.

Preparation

  1. Place cucumbers on a cutting board and use the flat side of a chef's knife or a rolling pin to firmly smash them until they split and crack (don't pulverize—you want chunks).
  2. Tear the smashed cucumbers into bite-sized irregular pieces and place in a bowl.
