  • 1 pound catfish fillets
  • 2 tablespoons Cajun seasoning
  • 8 sheets phyllo dough
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped green onions
  • 2 tablespoons lemon juice
  • 1/4 cup melted butter
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil spray

The Story & Steps

Growing up near the Delta, catfish was Friday night tradition. When I married into a Turkish family, börek became Saturday morning ritual. This recipe is our love story on a plate.

Preparation

  1. Season catfish fillets with Cajun seasoning, salt, and pepper.
  2. Preheat air fryer to 380°F. Cook catfish for 8-10 minutes until flaky.
  3. Let catfish cool, then flake into small pieces, removing any bones.
  4. In a bowl, combine flaked catfish, feta, dill, green onions, lemon juice, and smoked paprika.
  5. Lay one phyllo sheet flat and brush lightly with melted butter. Top with another sheet.
  6. Cut the stacked sheets into 3 long strips.
  7. Place 2 tablespoons of filling at one end of each strip.
  8. Fold into tight cigar shapes, tucking in the sides as you roll.
  9. Brush each roll with butter and spray lightly with olive oil.
  10. Air fry at 350°F for 12-15 minutes, turning halfway, until golden and crispy.

These freeze beautifully! Make a double batch and air fry straight from frozen, adding 3-4 extra minutes to the cooking time.
