  • 6 cups vegetable stock, warm
  • 1 cup white wine
  • 1 onion, finely diced
  • 3 tablespoons butter, divided
  • 1/2 cup Parmesan, grated
  • Flavor pockets: caramelized onions, lemon zest, crispy bacon, blue cheese, wasabi peas (crushed), candied ginger, sundried tomatoes, black garlic, saffron butter, chili oil
  • Salt and pepper

The Story & Steps

Harry Potter's introduction to Bertie Bott's Every Flavour Beans taught him that magical candy could taste like anything from toffee to earwax. This savory risotto captures that element of surprise by incorporating distinct flavor "pockets" throughout, turning each bite into an adventure.

Preparing Flavor Pockets

  1. Prepare small amounts of various intense flavors: deeply caramelized onions, crispy bacon bits, tiny cubes of blue cheese, crushed wasabi peas, minced candied ginger, chopped sundried tomatoes, slivers of black garlic, saffron-infused butter, and drops of chili oil.
  2. Keep each flavor separate in small bowls.

Making the Risotto Base

  1. In a large pan, melt 2 tablespoons butter and sauté onion until translucent.
  2. Add rice and toast for 2 minutes until edges become translucent.
  3. Pour in wine and stir until absorbed.
  4. Begin adding warm stock one ladle at a time, stirring frequently and allowing each addition to be absorbed before adding more.
  5. Continue for about 20 minutes until rice is creamy and al dente.

Assembly

  2. Remove from heat, stir in remaining butter and Parmesan.
